It can be used for short and long leavening and completely replaces brewer's yeast.

Thanks to the new canister, Ruggeri organic dried sourdough preserves its flavour for longer, in a natural way. The freshness-saving lid allows you to open and close the package comfortably, ensuring a better preservation of the yeast.

The canister of Ruggeri organic dried sourdough is completely recyclable: the cap in plastic collection, the central canister in paper and the easy-peel-off tab in aluminum. A eco-friendly packaging, designed to reduce the daily use of plastic. In addition, for a even longer lasting preservation, the cardboard of the canister is aluminized and protects from light sources and the entry of air.

What is organic dried sourdough?

The Ruggeri organic dried sourdough is born from the selection of best organic sourdough starters. This dried sourdough does not require the addition of brewer's yeast and is ideal for short and long leavening. Ruggeri organic powdered sourdough guarantees particular aromas that enhance flavour of baked products. It gives the dough an intense scent and improves workability of the dough. The presence of brewer's yeast allows the dough to rise in a few hours. Ruggeri organic sourdough is suitable for all types of bread, focaccia, pizza and leavened cakes.

How to use organic sourdough

For homemade bread, pizza and focaccia

  • Short leavening: dose at 20% of the total flour required by the recipe and let rise for 2 hours at room temperature. For example, add 100 g of Dries Dourdough to 500 g of flour and follow the instructions in the recipe.
  • Long leavening: reduce the amount of sourdough to 10% and place the dough in the fridge for 6/8 hours.

How to store organic sourdough

The canister packaging preserves freshness of Ruggeri powdered sourdough: with the canister, Ruggeri organic sourdough lasts longer in your home pantry! The product is best kept in a cool place. In the warm months it is therefore advisable to place the canister in the fridge.

Suggested Recipe for Ruggeri Organic Sourdough Bread

Ingredients:

  • 500 g of type "0" flour
  • 100 g of organic dried sourdough with yeast (dosed at 20%)
  • 10 g of salt
  • 300 ml of water

Procedure: In a bowl, knead all the ingredients for about 10 minutes, until the dough is smooth and homogeneous. Leave the dough to rest for 10 minutes covered with a cloth and form a loaf. Let the loaf rest for 150-180 minutes on a baking sheet lined with baking paper inside the oven turned off. Remove the baking sheet, preheat the oven to 220°C and bake for 20-25 minutes.
