Ruggeri dry brewer's yeast is the result of slow drying, which allows to protect its leavening power preserving it over time.

It is a resistant yeast: always remains active, both in contact with air and mixed with flour and it can be kept longer in the home pantry.

Use it to give more volume to all your baked goods: bread, pizza, focaccia and much more!

Practical packaging with freshness-saving lid, which allows you to conveniently open and close the package, ensuring better conservation of the yeast.

His little canister packaging is completely recyclable: the cap in plastic waste, the canister in paper waste and the easy-peel-off tab in aluminum.

Ruggeri Dry Brewer's Yeast: How to Use It for Homemade Bread

For the preparation of homemade bread and pizza, we recommend measuring 6 g of this dry brewer's yeast for 500 g of flour. 6 g of Ruggeri Highly Active Dry Brewer's Yeast in fact are equivalent to 25 g of fresh brewer's yeast! Here is the recipe for preparing a fragrant homemade bread with our dry brewer's yeast. 

Ingredients: 500 g of Ruggeri Type 1 Wheat Flour - 6 g of highly active dry brewer's yeast - 10 g of salt - 280 ml of water.

Procedure: pour the flour, dry brewer's yeast, salt and 3/4 of the water into a bowl. Knead vigorously for 10 minutes. If the dough sticks, grease your hands with extra virgin olive oil. Pour in the remaining water and knead for another 10 minutes or so, until the dough is smooth and homogeneous. Shape the loaves and let them rise for 90-110 minutes on an oiled baking sheet, inside the oven turned off. Remove the baking sheet, place a small pan of water in the oven and bring to 220°C. Cook for 20-25 minutes in fan mode.

Pratico

Ho ribilanciato tutte le mie ricette con questo ldb, molto più pratico e con meno rischio di buttare prodotto rispetto al fresco che utilizzavo prima. Lavora benissimo per tutti gli impasti e i prodotti sono eccellenti anche con lievitazioni lunghe. Anche per la biga tutto ok.

Ottimo lievito per tutte le preparazioni

Sono molto soddisfatto dell aperformance di questo lievito, che utilizzo per preparazioni le più svariate, pane pizze, focacce, dolci lievitati ecc. Ha un'ottima resa anche con quantità minime e lievitazioni lunghe a TC.
Prezzo assolutamente più conveniente rispetto ai comuni ldb in polvere disponibili al supermercato (guardare il prezzo al kg)
