The Ruggeri mix contains Type 1 wheat flour, a less refined flour than type 0, but also durum wheat semolina, barley and spelt flour.
The pizza base prepared with this product will be source of fiber and source of protein: excellent nutritional values for a pizza base.
The preparation is easy: just water and oil to the mixture, knead and let rise.

Ruggeri Ancient Grains Pizza mix is a complete mix that already contains all the ingredients, even yeast and salt. The preparation is very easy: just add water, oil and knead. This mix is equipped with the patented packaging Ruggeri Magic Pocket which separates yeast from the other ingredients with an internal pocket, in this way the characteristics of the product are preserved without the use of preservatives. Here's how to use the preparation in this ancient grain pizza mix.
Ingredients: 1 pack of Ruggeri Pizza Mix with Ancient Grains – 300 ml of warm water – ingredients of your choice for the filling (tomato pulp, olive oil, etc.).
Procedure: pour the mix into a bowl. Add 300 ml of lukewarm water and knead vigorously for 5 minutes. Add 25 ml of olive oil and continue kneading for another 5-10 minutes. Leave the dough to rest covered with a damp cloth or cling film for 20 minutes. Spread the dough out on an oiled baking tray and leave to rise in the turned-off oven for at least 90 minutes. When the pizza has risen well, season the base with tomato or oil and bake at 210-220° C for 10-15 minutes. Remove from the oven, add the filling as desired and bake for another 7-8 minutes, until all the ingredients are cooked.
Wheat flour 75%, stone ground durum wheat semolina 10%, spelt flour 5%, barley flour 5%, wheat bran, salt, dry yeast, dried wheat germ sourdough, dried live lactic ferments 0.001%.
