How to use the professional Pizza 8 Cereals mix
The 8 Cereal Pizza mix is aconcentrated mix of special ingredients, which should be added to the flour used daily.It does not overturn the usual preparation process of master pizza chefs, but enriches the pizza bases with taste and fragrance.
Thedosage of the 8 Cereal Pizza mix is 2+8, that is: 2 kg of concentrated mix + 8 kg of the flour normally used by the master pizza chef.
We suggest youfill the pizza baseprepared with the 8 Cereal Pizza mix, combining seasoned cold cuts, fresh cheeses and creamy cheeses.

Utilizziamo la farina nucleo maltata, ormai da tre anni. La usiamo in un impasto indiretto, con una favolosa resa sia in termini di gusto che in termini di sviluppo. La notevole carica enzimatica ci permette di gestire una corretta maturazione in tempi utili anche per un impasto indiretto, mentre la tostatura del malto crea una piacevole texture di sapori.
Lodevole anche lo shell Life, che con l’utilizzo delle farine nucleo abbiamo notato guadagnare 24/48 ore.
