Rice belongs to the genus Oryza and is the most widespread cereal in the world. A staple food for about a third of the world's population, it originated in Southeast Asia, where it has been cultivated for more than 5.000 years.
Appreciated for its nutritional qualities, it has a medium-low satiety index, but greater than that of pasta. By absorbing a higher quantity of water, it develops a greater volume and weight for the same amount of calories.
Rice flour can be used for many preparations, such as bread, pasta, crackers, cakes and biscuits. It is also excellent for breading and tempura.
