Ingredients:
- 60 g of Arifa flour Organic Flour
- 70 g of Ruggeri rice flour
- 90g of oat flour
- 5g of cocoa
- 1 1/2 banana
- 300 ml milk
- 1/2 sachet yeast
- 50 gr coconut oil
- 100 raspberries
- 150 cherries
Procedure:
Preheat the oven to 200°.
Prepare all the ingredients, cut the cherries and raspberries and set aside. Mash the banana in a small bowl and set aside.
In a bowl pour all the dry ingredients: flours, cocoa, yeast and mix them. In a larger bowl mix the coconut butter, mashed banana and almond milk, until they are perfectly combined, then add the dry ingredients and mix. You will get a dense but not compact dough, at this time, add the raspberries and cherries, leaving some aside, and mix.
Pour the mixture into a 24 cm springform pan, level it and decorate the top with the cherries and raspberries.
Bake for 45 minutes at 200°, check the cooking with a toothpick, once cooked, remove from the oven and leave to cool, then remove from the mold and leave to cool.
