Ingredients:
- 250 gr of Arifa Ruggeri flour
- 130 g cold butter in cubes
- 75g dark chocolate
- a pinch of salt
- 2 egg yolks
- 100 g of brown sugar
- a teaspoon of vanilla seeds
Procedure:
In a saucepan, heat the chopped chocolate and 50 g of butter cut into cubes over low heat, stirring continuously with a hand whisk. When the mixture is smooth, set it aside.
Take a large bowl and mix the sugar, the remaining butter and the egg yolks with your hands.
Add the arifa flour, vanilla and a pinch of salt. Finally, add the chocolate mixture (making sure it is not hot).
Mix vigorously until you get a smooth dough, form a ball, flatten it and wrap it in a sheet of baking paper. Let it rest in the fridge for 30 minutes.
On a floured wooden board, roll out the dough with a rolling pin (about 2 mm) and shape the biscuits with the petit cutter. Then place them on a baking sheet with baking paper and prick them lightly with a fork.
Preheat the oven to 180° and cook for 18 minutes.
